KOLACHE
This kolache recipe is one learned from Spillville, IA. This recipe is
good for both open and closed kolaches, cinnamon rolls, and rohiky. It is
a soft dough and the baked items freezes very well.
Beat together until creamy: 4 egg yolks, ¼ heaping cup lard, ½ stick butter
(4 tbsp), ½ cup sugar
Add 2 tbsp instant mashed potatoes dissolved in ½ cup hot water
Add 1 cup instant dry milk and 1 tbsp. salt dissolved in 2 cups warm water
Beat in 2 tbsp instant dry yeast with 4 cups 昀氀our. Beat three minutes.
Add 1½ cups 昀氀our. Beat three minutes more, or until smooth and shiny. If too
thick, add warm water.
Put in greased bowl and cover with plastic. Let rise 30 minutes or more, then
punch down. Let rise 20 30 minutes more until doubled. Put on 昀氀oured board
and shape in balls for open kolaches. Cover with plastic. Let the balls raise until
double or 昀椀nger imprint remains. Fill with desired 昀椀lling. Let 昀椀lled dough rest for
about 20 minutes. Bake at 400-425 degree oven for about 8-10 minutes. Makes
approximately four dozen.
NOTE: All ingredients should be at room temperature.
